Walnuts for Baking

California Walnuts are versatile and can be added to any baked goods, from breads and muffins to pastries and fine cakes. They add to the eating experience because of their crunch taste and appearance.

Valentine's Hearts

Ingredients for 2 persons:

  • 120 g California walnut kernels
  • 50 g butter
  • 50 g sugar
  • 1 bag of rum aroma
  • 1 pinch of salt
  • 1 egg
  • 75 g flour
  • 25 g starch
  • 2 tbsp cocoa
  • 1/2 tbsp baking powder
  • 2 tbsp milk
  • Also
  • 150 g white couverture chocolate
  • 50 g full-milk couverture chocolate

1. Put two walnut kernels aside. Chop the rest of the kernels. Stir butter, sugar, salt and rum aroma in a mixing bowl, then add egg and continue stirring until the sugar has been dissolved. Gradually stir in the flour with starch, cocoa, baking powder and 50 g walnuts. Stir in milk. Divide into two greased heart molds and bake at 175° C (gas level 3) for approximately 25 minutes.

2. Place hearts on a cooling rack to cool down. Separately melt the couverture chocolate in accordance with instructions. Coat the hearts with white chocolate. Pour the full-milk couverture chocolate into a freezer bag, cut the tip off and coat the hearts with the liquid chocolate as you like. Decorate each of the hearts with 2 walnut halves and decorate the edges with chopped nuts.
