Walnuts for Baking

California Walnuts are versatile and can be added to any baked goods, from breads and muffins to pastries and fine cakes. They add to the eating experience because of their crunch taste and appearance.

Cream Cheese Walnut Wafer Cookies

Ingredients for 42 persons:

  • 100 g powdered sugar
  • 120 g butter (soft)
  • 120 g cream cheese, low-fat
  • 90 g brown sugar
  • 1 egg
  • 1 tsp Vanilla extract
  • 130 g California walnuts
  • 200 g flour
  • 1/4 tsp salt
  • 3/4 tsp cinnamon, grounded
  • for decoration:
  • 120 g dark chocolate coating
  • 60 g California walnuts, chopped

1. Mix the powdered sugar, soft butter, cream cheese and brown sugar with a handheld electric mixer on highest stage. When the mixture is easy and loose, add egg and vanilla extract and mingle it during several minutes with the mixer.  

2. Chop walnuts in rough pieces and ground it together with 100 g flour in an electric blender. Add walnut-flour-mixture, the rest of the flour, salt and cinnamon to the butter-mixture and mingle all together.

3. Roll the dough out between two slices of baking paper to a size of 1 cm and freeze it until firm. Preheat the oven up to 180 °C (fan oven: 160 °C, gas oven: stage 2). Take the dough out of the fridge and cut out heart shaped cookies. Place the cookies on a baking tray lined with baking paper and bake them for 12 to 15 minute. Let the cookies cool down on a cooling rack.

4. Melt the chocolate coating carefully in a bain-marie. Chop walnuts and roast them gently. Decorate the cold cookies with chocolate and walnuts.
