Walnut Rocket Crust – for example for Roast Beef

Ingredients

For the Crust
1 cup breadcrumbs
2/3 cup California walnuts
1 cup arugula
1 1/3 cups butter
salt
pepper
garlic

Description

No matter if meat or fish, this walnut rocket crust give a wonderfully crispy touch to every main dish.

Preparation

Melt butter at low heat. Add breadcrumbs, walnuts and aragula to a blender and mix at the highest level until smooth. Stir in butter and season with salt and pepper. Spread the mixture onto parchment paper and smooth out to approx. 1 cm thickness.
 
Tip: Freeze the mixture. Once the mixture is frozen, slice into the desired size, wrap and return to freezer. This way the crust is perfectly prepare and can be used as required.
 
Example: Recipe with Roast Beef

Brown 200 g of roast beef on both sides and then season. Cut walnut crust into the proper shape so that it covers the entire piece of roast beef. Place the crust onto the roast beef. Bake in oven at 110 °C until the meat reaches a core temperature of 49 °C. Let it stand for 10 minutes at 56 °C. Roast crust under salamander or grill until golden brown and serve.
