28.01 % egg white
14.85 % egg yolk
15.11 % California walnut meal
14.72 % California walnut pieces
10.94 % sugar
10.42 % butter
2.61 % pre-gelatinized brown rice flour
1.11 % baking powder
0.65 % vanilla extract
0.65 % ground cinnamon
0.52 % natural orange flavor
0.13 % ground cloves
0.13 % cardamom
0.13 % salt

Preparation

Cream together butter and sugar.

Slowly add egg yolks.

Add vanilla and orange flavor.

Sift together brown rice flour, baking powder, cinnamon, cloves, salt and cardamom.

Fold in dry ingredients.

Fold in walnut meal and pieces.

Separately whip egg whites to a firm peak.

Fold in egg whites, pour into baking molds.

Bake at 180 °C for 25 minutes in a conventional oven or 19 minutes in a convection oven.
