California Walnut Omega Burgers



43 % California walnuts (toasted)
21 % garbanzo beans (rinsed and drained)
8.3 % red or white quinoa (cooked)
1 % panko breadcrumbs
1.8 % chia seeds
2.5 % apple cider vinegar
2.5 % olive oil, divided
0.4 % cumin (ground)
8.5 % eggs
1 % garlic (minced)
10 % California walnuts (finely chopped)
Salt and pepper to taste


These burgers are packed with flavor without guilt. California walnuts add a nice nutty note with a boost of Omega’s in this meat-free patty.


Combine walnuts, beans, quinoa, breadcrumbs, chia seeds, vinegar, 1/2 oil, cumin, eggs and garlic in food processor. Pulse to finely chop ingredients and season with salt and pepper.

Using wet hands, shape mixture into 6 oz patties. Lightly press finely chopped walnuts onto both sides.

Heat remaining oil in a very large nonstick skillet over medium heat. Cook patties for 3 to 4 minutes on each side or until golden brown, adding additional oil to skillet after turning if necessary.

Serve on toasted whole-grain buns or ciabatta rolls with lettuce, tomato and onion, and any other desired condiments.
